Pancake stack

Pancakes are a great pick me up, any time of the day. You’ll usually find an egg, milk and flour in the pantry so a good back up when you stuck for something sweet: and cheaper, and tastier,  than the packeted pancake mixes. The only difficulty is deciding what to put on top!

Here are some suggestions, but feel free to suggest your favourites…

The classic: Lay a pancake onto a plate coated with sugar. Sprinkle with more sugar, and a squeeze of lemon juice. Roll up and enjoy.

Sweet sensation: Before you roll-up the sugar-coated pancake, top with slices of fresh mango and scoop of vanilla ice-cream. A little messier and will need knife and fork. Decadent delight

The Americana: Swirl of maple syrup (try and buy the real deal) on top of a sugar-coated pancake. Sugar hit!

The secret squirrel: a smothering of Nutella.

Savoury: Use the pancakes like cannelloni. Put a dessertspoon of cooked savoury mince onto the pancake. Roll-up and tuck in the ends as you go so the filling does drop out. Lay rolled-up pancakes into a shallow ovenproof dish and cover with layer of cheese sauce. Pop into oven for 20 minutes to heat up.
